The light green-to-tan fruit can grow up to 4 feet long and may be harvested anytime, from just a few inches through its full size. Eaten when they’re finger- thin and about a foot long, steamed, grilled, or sliced raw in salad. It stays firmer than other summer squash in sauces, and has a nutty taste. As four-foot-long winter squash, their mildly sweet bright orange flesh suits both soups and pies. A vining variety that is best trellised for straighter fruit.
